Persimmon trees (Diospyros kaki), can reach up to 25mt high and has eliptic oblong leaves about 1-3cmlong. Originary from Asia its fruit is spherical and sweet when mature, they may also be known as:  caqui, palosanto, persimonio or zapote.

Generally it is said that perismmon comes from China and Japan, but it can be grown in any subtropical region.

There are over 1000 varieties differentiated between not astringent (free from tanines) and non astringent (with tanines wich gives the fruit a tartar taste).

Maturity can be appreciated with color changes in the fruit skin, from green to orange-red.
